So, I'm going to bet that, like me, you are super-busy these days! Kids, work, home--everything pulling you in all directions at once. We're bombarded with media images of perfect people and perfect families. Certainly, somewhere deep in the back of our minds we all know that those 'perfect' images are totally unrealistic. But there are some things we simply must make a priority; for me, it's my family's health.
I have a 2 year old son and a 7 year old daughter. Guess what they want to eat? Spinach, beets, broccoli and carrots? NO! Mac & cheese, buttered noodles, pizza or spaghetti are simply their favorites. Now, we used to have that rule--'even if you don't think you'll like something, try at least one bite of it.' Over time, I realized that the one bite of veggies was ALL they were getting. My daughter began to have severe stomach problems (which we can discuss more later) and we finally realized that it was coming from a lack of fiber. Something had to be done! We tried fiber drinks, miralax, and so many things. But, I don't want my child to live her life on prescription meds if there's another solution!
So, I started doing my research. I read up on which veggies offer both fiber and a vitamin kick! But, I'm a realist. I'm NOT going to spend dinner time fussing with my children over how many mouthfuls of my painstakingly prepared food they are required to eat, all the while listening to their whining complaints!
So, I got SNEAKY!!
